Two kitchens and one question A Hainanese chicken rice stall at Maxwell Food Centre in Singapore cooks one dish, several hundred times a day, for decades; a kampung kitchen in Perak, in provincial Malaysia, cooks a different dish every day and the same festival dish once a year. The question this essay asks is what each of those arrangements teaches, and to whom. My earlier answer was that the stall teaches efficiency and specialisation while the kitchen teaches heritage and intuition, and that both are valuable. That answer is not wrong, but it is unusably vague in one direction and positively misleading in the other. The vagueness is that "decades of perfecting a dish" was offered as if long repetition were self-evidently a route to skill, which the research on expertise says it is not. The misleading part is worse: describing the grandmother's judgement as intuition rather than as technique gets the case exactly backwards, and the mistake has consequences beyond the essay. What follows keeps both worked examples and both verdicts, and puts the reasoning under them. The order is: what kind of learning these two settings both are; why forty years at one dish does not automatically produce mastery and what does; what precisely the grandmother is perceiving when she is said to be guessing; the three parameters on which the settings actually differ; and two claims from the original that the evidence obliges me to withdraw. Both settings are apprenticeship, in a specific technical sense The most useful frame here comes from Jean Lave and Etienne Wenger (1991), who studied how skills are acquired in settings with no formal instruction at all — among them Yucatec Mayan midwives, Liberian tailors, US Navy quartermasters and butchers' apprentices. Their central term is legitimate peripheral participation , and each of the three words does work. The newcomer's activity is participation : they are doing part of the real job, not a simulation of it. It is peripheral : the part they do is the part where a mistake costs least, and they move inward as competence grows. And it is legitimate : their contribution actually counts towards the output, which is what distinguishes an apprentice from an observer. The group within which this happens they call a community of practice — the set of people who share the activity, its standards and its tools. The detail from their tailoring case is the one that reorganises the comparison. Lave found that apprentices in the tailors' shops of Monrovia learn the trade in roughly the reverse of the order in which a garment is made: they begin with finishing and pressing completed clothes, move to sewing, and reach cutting last. The sequence is not perverse. Starting at the end means the apprentice handles the finished standard before attempting any step, so that every later task is performed by someone who already knows what the result is supposed to look like; and it also means the apprentice's earliest errors are the cheapest, since ruining a press is recoverable and ruining a cut is not. Both of my kitchens run this curriculum. The child in the kampung kitchen is given the pounding, the washing, the grating of coconut long before the seasoning, and has eaten the finished rendang every year of her life before she is allowed near the pot. The stall's junior does the rice, the washing-up and the plating before touching the poaching, and has seen the finished plate leave the counter several thousand times first. Neither is being taught a subject. Both are being moved inward along a sequence ordered by the cost of error. That the two settings are the same kind of learning is what makes the differences between them worth stating precisely, rather than as a contrast between the urban and the traditional. Why forty years at one dish is not, by itself, expertise The original essay leaned on duration: the recipe inherited, the technique honed over decades. Anders Ericsson, Ralf Krampe and Clemens Tesch-Römer (1993) are the reason that will not do on its own. Studying violinists at the Berlin music academy, grouped by their teachers' assessment of their prospects, they reconstructed each player's history of practice and found that accumulated hours of a particular kind of activity tracked attainment closely — the best group having put in roughly twice as many by the age of eighteen as the least accomplished. The kind mattered as much as the quantity. They defined deliberate practice as effortful activity designed specifically to improve some identified aspect of performance, carried out with informative feedback and with opportunity for repetition and correction; they were explicit that it is neither work, which aims at output, nor play, which aims at enjoyment, and that it is not inherently pleasant. Their broader claim, supported across several domains, is that mere accumulated experience predicts performance poorly, and that practitioners routinely plateau at the level of competence their job requires and then stay there for decades. Take that seriously and the hawker case becomes a question rather than an assumption. Why should a stall that has cooked the same dish since 1975 be any better at it than one that opened last year, if repetition alone does nothing? The answer is available, and it is what the original essay should have said instead of "dedication". The stall has an unusually well-formed feedback loop, and it has the three components Ericsson's definition requires: Repetition at volume. Several hundred iterations a day compresses into one year what a domestic cook accumulates in a lifetime — but repetition is the least of the three and does nothing on its own. Immediate, informative feedback. The result is consumed within minutes, in front of the cook, by people who eat the same dish elsewhere and can compare.
